I love absolutely everything about Christmas. The fairy lights; the fragrant pine wreaths; the masses of blue hydrangeas and white Icebergs I pick from my high summer garden; the white candles; the polished silver; the glittering crystal… And then there’s the taste and smell of Christmas – cinnamon, cloves, nutmeg, ginger and allspice – they don’t just belong in Christmas fruitcake, they belong in everything! And that’s how this recipe happened. Because why not bring a bit of festive cheer to the breakfast table too?
All you need is…
4 cups old-fashioned rolled oats (look in the health food section of your supermarket)
pinch of salt (an eighth of a teaspoon)
1½ cups raw almonds (left whole or roughly chopped)
2 tsp powdered cinnamon
2 tsp mixed spice
third of a cup vegetable oil
10 Tbsp Illovo Maple Flavoured Golden Syrup
1 cup dried cranberries
½ cup golden sultanas
Preheat your oven to 155 degrees Celsius. Line two baking sheets with baking paper. Place the oats, salt, almonds, cinnamon, and mixed spice in a large bowl. Pour over the oil and syrup. Toss thoroughly to ensure everything is well coated. Divide the mixture in half and spread out evenly on the two baking sheets. Pop in the oven for 40 minutes, stirring well after the first 20 minutes. Remove and allow granola to cool completely. Add the cranberries and sultanas. Store granola in an airtight container.
Serve with double cream plain yoghurt or vanilla yoghurt. If you want to add fresh fruit, banana or plump summer-ripe apricots work really well with the warming spice notes of this Christmas granola.
